Cooking Notes
Apr. 21st, 2011 01:18 pm I've decided that next time I won't add chicken parts to my stock because the flavor difference for me is not that great, and this way I can keep my stock vegan in case I want to cook for vegan/vegetarian friends. The rendered chicken fat didn't add much flavor to the stirfry I made a few weeks ago, although I might try again if I ever get a hold of duck scraps. I think I'm going to cook with more coconut milk, because I do enjoy the taste of it in vegetable curries and soups, and I actually prefer coconut milk in soups over dairy. I find even when I don't like eating a bean dish with rice I do enjoy beans in burritos and over toast.
One day, everybody will eat Greek yogurt, and sour cream will be a culinary museum exhibit. Although the trick is to get good Greek yogurt and not the shoddy corporate cash-in.
