I cooked quinoa for the first time this morning.
Things I discovered:
1. You can make an amazing stock out of just squash and garlic.
2. I used 2 cups of spinach for half a cup of raw grains, but I think I could have easily used 4 cups.
3. It makes for a pretty light breakfast, bu with the same ease and speed as my usual scrambled egg sandwiches. I do feel I need to add something extra; today I'll make a smoothie.
